Ingredients:
- dried chickpeas
- onion
- garlic
- coriander
- cumin
- flour
- salt
- pepper
- oil
Notes
- Removed parsley
- Canned chickpeas should be dried thoroughly; mixture a little wet
- added more flour and some breadcrumbs to hold shape
- outside darkened before inside was completely fried - still too wet?
Tahini sauce

- tahini (sesame seed paste)
- garlic
- Kosher salt
- olive oil
- lemon juice
- replaced half with vinegar for less intense burn
Notes
- Halved recipe
- Used “白ぬりごま” (white sesame paste) because that’s all I have
- worked well, but it’s thick - had to cut it with some water to get to “saucy” texture
- add water/vinegar/lemon juice in small increments and taste often - easy to add too much
- garlic mashes well in a mortar and pestle but not all of it can be recovered from the mortar

- warm water
- active dry or instant yeast
- all-purpose flour
- salt
- olive oil
Notes
- Halved recipe
- used strong flour; seemed to be fine
- no rolling pin; used hands to flatten
- next time flatten less - the least flattened one had a good pocket, the rest needed surgery
Review
- Generally successful
- Serve with chopped cucumbers & tomatoes, lettuce, harissa
- Pita was delicious despite mediocre pocket development
